Eastbridge Town Center, a project initiated by Evergreen Development and City Street Investors, is a highly anticipated, new shopping and dining district located on the eastern edge of Stapleton on the corner of Martin Luther King Jr. Blvd. and Havana Street. Next Door Stapleton will occupy a 3100 square foot space within the development.
Other restaurants and retailers to join Next Door include Los Chingones (a Mexican street food restaurant) and a breakfast eatery both owned by Troy Guard (of TAG, Guard and Grace and Bubu) as well as Wildflowers, Pilates Evolution, and Endorphin Fitness.
Next Door Director of Operations, Colin Ness, and Next Door Culinary Director, Merlin Verrier, are both Stapleton residents and thrilled to bring the concept to their community. “Next Door will fit right at home in Stapleton. As a family-friendly pub with a simple menu that features burgers, salads and sandwiches using consciously sourced ingredients, I think my Stapleton neighbors will really enjoy having Next Door as a regular dining option for lunch and dinner,” said Colin.
Next Door is a community pub open seven days a week serving lunch, happy hour, and dinner. Next Door’s menu features a selection of shared plates, sandwiches, salads, plates, sides and dessert. The food is simple and the service is fast. The drink menu offers an assortment of kegged beers, wines and cocktails. The average ticket at Next Door is $15 for lunch and $20 for dinner.
“The Eastbridge partnership is thrilled to have Next Door join our exciting tenant lineup at the Eastbridge Town Center. Next Door not only brings an amazing dining option to Stapleton/Park Hill but also a business philosophy – Community Through Food – that our partnership supports and we believe will resonate in the neighborhood,” said Tyler Carlson of Evergreen Development.
In May 2016, Colin and Merlin will begin searching for a General Manger and Head Chef to lead Next Door Stapleton.
