March Recipe of the Month | The Kitchen Fort Collins

Apple Amaranth Porridge:  A warm and satisfying way to start your day 

(Recipe serves 1-2)

 

Ingredients:

1 cup Cooked Amaranth

¼ cup Heavy Cream

1 Tbsp. Maple Syrup

1 Tbsp. Brown Sugar

¼ cup Raisins

1 Tbsp. Butter

1 Honeycrisp Apple

 

Instructions:

Prepare Amaranth according to instructions. Add heavy cream, raisins, and maple syrup. Stir until hot. Dice apple and fold into amaranth mixture. Pour into a soup bowl and top with butter and brown sugar. For something a little extra, garnish with torn mint, fresh berries and/or a drizzle of heavy cream.
